Does the new version, releasing next month, contain most survival features from the old version? Or will it mostly be building and some small things, while the real other features like paper pressing will be added later?

The next update will be available on Wednesday, December 18, in the early evening (GMT+1).
This update will not yet replace the Java version, instead it is the actual content update. We'll provide more information about the transition together with the update.

The upcoming update will solely focus on building. It introduces all relevant building tools and building items. After that update, we will focus on multiplayer (which is mostly done btw, so it shouldn't take too long until that update becomes ready). After MP, it's our intention to get blueprints and world features ready, then we can finally focus on adding survival features and npcs

Yes indeed, it's still too early to replace the Java version. However, even once the Java version is actually replaced, it will still be playable (Standalone users can still download a separate launcher for it, and Steam users can get the Java version through a separate beta branch).
