If you could extract bigger stones from a rock with bigger tools or splitting, It could be a nice thing to use a chisel to create sculptures (could be like mining, but in a smaller scale with different chisel sizes.)
Pottery could be possible if you collect clay and use a potters wheel and (maybe also sculpting things out of clay.)
Beside that it could be also nice to braid carpets and clothes as realistic as possible.
So imagine: You can process buildings like creating ornaments at walls of churches, mansions and fountains.
