I have a player on my server that does not like the UI display telling you what the building selections are on the left side of the screen. Is there a way to toggle this off?

Yes, you can disable that in the game settings (under "Miscellaneous"). Scroll down to the "Building" section and turn off "Show Information" - this will disable the building info on the left side of the screen
