Basically that's already possible, but unfortunately the setting isn't exposed to the settings menu yet... but we will change that with the next update
In the meantime, you can edit the config file and change Game_NpcSpawnBanditsDuringDay to true manually^^

And you can still ask to make the Sounds of Animals a scream of gulls already got out, but if you just turn off the sound, I will not hear the attacks of wolves and bears
