I used to know how to type on a sign, but either my brain is a sieve (likely) or it's broken? I can't remember the steps. I have placed a sign, and I can see the pencil cursor. I have tried left mouse click, right click, middle, but I can't seem to get the typing dialogue window come up. What's the trick?

I believe you press the "F" key to write on a sign.

I know, hints would be useful. Just came back to this game after the update and hotfixes. Was tinkering with another game and now I'm back here and went "how the heck did I do this and that" ha ha.

Actually, I'm not able to go back and edit the sign AFTER it's placed and written on. So that really the thing that I hope could be changed.
If you look at the sign and hold F you can edit the text I think

You are talking about the "Placard" right? - in this case you fold "F" and a radial menu pops up for you to edit the text or pick up (remove) the Placard..
