As far as I know, plants continue to grow even when you're offline. Therefore, it's unnecessary to leave the game running just so the plants can grow.

In single-player, when you tab away from the game, it loses focus and pauses. That’s normal behaviour.
What you’re describing is the ability to, for example, plant a tree, tab out to do something else (like emails), then return later and find that the tree has continued to grow.
I can’t see that mechanic changing in the short term.
As a workaround, you can set up a local server instead. There’s no need to open any ports on your router — just connect to it yourself using the loopback address (127.0.0.1). That way, the game continues running even when you tab out, and only you can access the server.
Yes! Exactly! I want to tab-out, do other things, and time keeps running and when I come back, things have happened, it's daylight out and I keep playing. It works great with my brain, and it helps me work in spite of fatigue. I wish that mechanic worked in singleplayer. You have the option to not pause the game in-menu, and I was hoping that'd mean it'd keep working in the background. But alas, no.
I might have to do the server thing. It's really not ideal, but what can I do? If I do this in servers, then people complain because I don't want to skip the night, or I have to skip the night for them, but that breaks my workflow.
