what crafting station do you use to make hunting knifes and ore detectors

Ore detector is in Workbench Tier II under tools.

looked at every workbench and inventory crafting

The hunting knife does not have any specific purpose at the moment. Probably it will stay in the game (unused but fully implemented items might be interesting for modders at least), eventually it will be available in the future again (once there is a purpose for it, it will be craftable at the workbench again), but we're not sure about that
