Simple suggestion:
Change the name and 3d model for the 'hunting knife' if it's to be used in the tanning process. The correct tool is a 'flesher' or 'fleshing knife', a two handled knife used to scrape the flesh side of hides - hunting knives are used for hunting!

I like this idea! I had a suspicion that we were using the wrong tool for the job

I love chopping down trees with the knife... irl I just use a machete! 
I dont care about it, in Skyrim they just a dagger instead
